Chewy Gooeys
Our neighbor Barb Dolphin gave us this recipe way back when. It's like a Rice Krispie treat, but it's healthy because it is made with Special K cereal. And has lots of chocolate and peanut butter, so it's packing some good flavinoids and protein, right? Well, that's my story and I'm sticking to it.
Rachel put this in a family recipe book she made for school and since it is handy and on the computer, I'm using that recipe to build this. I just noticed that her last instruction says to 'cut into swears with sharp knife'. Hope the teacher didn't give that to one of her kids to try out. 'Well, Honey, they taste great, but there's something about the presentation that's just a little off.'

Ingredients
1 cup white sugar
1 cup white Karo syrup
1 Tbs. butter
1 cup smooth or crunchy peanut butter
7 cups Special K cereal
16 oz. package semi-sweet chocolate chips
16 oz. package butterscotch chips
Cooking utensils:
Medium saucepan
Large glass measuring cup
Large mixing bowl
Buttered jelly roll pan or oblong baking dish
1 cup white Karo syrup
1 Tbs. butter
1 cup smooth or crunchy peanut butter
7 cups Special K cereal
16 oz. package semi-sweet chocolate chips
16 oz. package butterscotch chips
Cooking utensils:

Buttered jelly roll pan or oblong baking dish
Preparation
Put cereal into large mixing bowl and set aside. Combine sugar, Karo syrup and butter in saucepan and bring almost to a boil. If mixture boils, remove immediately from heat and stir. Add peanut butter and reheat until almost boiling again. Add this to the cereal and mix well. Pour mixture into buttered pan and smooth with spatula or knife.
Pour chips into measuring cup and heat until melted in microwave. Stir well to combine flavors. While still warm, spread over cereal mixture like frosting. Wait until cool and cut into squares with sharp knife. Sometimes we put it in the fridge for a couple of hours and then pop the whole thing out of the dish onto a cutting board and use a big butcher knife to cut it up. Expect some losses. (That one almost fell on the floor, I better eat it)
